Date squares


  • 1 packet Tennis biscuits
  • 185g butter
  • Coconut to taste
  • 125ml sugar
  • 125g pitted dates chopped


  1. Place butter, dates and sugar in a saucepan and bring to boil.
  2. Pour over broken biscuits and mix well.
  3. Add coconut to taste.
  4. Press mixture into tin and smooth with spoon.
  5. Sprinkle with plenty of coconut and place in freezer to set.
