Chocolate cake


  •  1 cup boiling water
  • ½ cup cocoa powder
  • 1 ¾ cups flour
  • 1 cup sugar
  • 3 tsp baking powder
  • pinch salt
  • 5 eggs separated
  • ½ cup sunflower oil
  • 1 tsp instant coffee
  • ½ tsp vanilla essence


 Pour boiling water over cocoa and allow to cool.

Mix flour, sugar, baking powder and salt.

Make a hole in flour mixture and pour in cocoa mixture.

Add vanilla essence, egg yolks and oil. Mix well.

Fold in stiffly beaten egg yolks.

Bake @ 180 C for 25-30 mins.

 For the icing

  •  2 cups icing sugar
  • ½ cup cocoa powder
  • 250 g butter
  • 1 tsp instant coffee (optional)
  • 1 egg

Beat well. (If not runny enough to spread over cake, add a little water.)

Decorate with shavings of dark chocolate.
