Ingredients
- 1 cup boiling water
- ½ cup cocoa powder
- 1 ¾ cups flour
- 1 cup sugar
- 3 tsp baking powder
- pinch salt
- 5 eggs separated
- ½ cup sunflower oil
- 1 tsp instant coffee
- ½ tsp vanilla essence
Method
- Pour boiling water over cocoa and allow to cool.
- Mix flour, sugar, baking powder and salt.
- Make a hole in flour mixture and pour in cocoa mixture.
- Add vanilla essence, egg yolks and oil. Mix well.
- Fold in stiffly beaten egg yolks.
- Bake @ 180 degrees C for 25-30 mins.
For the icing
- 2 cups icing sugar
- ½ cup cocoa powder
- 250g butter
- 1 tsp instant coffee (optional)
- 1 egg
Beat well. (If not runny enough to spread over cake, add a little water.)
Decorate with shavings of dark chocolate.
